How to serve.
- Fridge, a few hours at least. Cold bubbles last longer.
- Fill a highball with ice — lots of it.
- Pour gently down the side of the glass to keep the fizz.
- A lime wedge on top if you like it sharper. Squeeze, drop, sip.

Tasting notes.
Rum & cola, the long way round.
The rum and cola might be the most ordered highball on earth — and the most taken for granted. For our second sparkling collab with Premium Spirits for Le Salon du Rhum de Spa, we took it apart and built every piece ourselves.
The rum is Botran 15, aged high in the mountains of Quetzaltenango — "the place of the quetzal", the bird on Guatemala's flag that also gave its name to the currency. The cola is ours: cola nut, coffee, maté, molasses, three citrus, a cupboard of spices and a pinch of oregano nobody ever guesses. Cherry liqueur for the cherry cola you drank at fourteen, lime for the adult you are now.
The name? Quetzalcoatl was the feathered serpent of Mesoamerica. This one has feathers too. It just bites less.
