Paranubes Caña Morada is a limited, mono-varietal expression from the high, misty valleys of Oaxaca’s Sierra Mazateca. Here, José Luis Carrera grows Caña Morada among other heirloom canes, all without pesticides or fertilizers.
The juice is wild fermented in pine vats using native yeasts activated by mezquite bark, then distilled in a copper column still. Heads, hearts and tails are blended to reach 54.4 % — no water added, no filtration. The result is a raw, vibrant rum that captures the terroir of Rio Tuerto.
