Cocktail Bar in Saint-Gilles
The Modern Alchemist is a craft cocktail bar in the heart of Saint-Gilles, Brussels. We opened on avenue Adolphe Demeur in December 2018 and have been pouring rum, seasonal creations and properly made classics ever since — in an unpretentious neighbourhood bar where everyone is welcome.

We’re at 55, avenue Adolphe Demeur, 1060 Saint-Gilles, in the south of Brussels — a stone’s throw from the Saint-Gilles town hall, one of the most beautiful buildings in the commune and well worth the detour on your way over. Get directions →

Opening hours
We open every evening at 6pm, except Sundays.
- Monday to Thursday — 6:00pm to midnight
- Friday and Saturday — 6:00pm to 1:00am
- Sunday — closed
Last orders are taken 30 minutes before closing.
Walk-ins and reservations
Walking in is how most people come, and it stays that way — push the door and we’ll find you a spot. Early in the evening is usually the calmest moment if you’d like a seat at the bar and time to go through the menu with us.
For a group, or an evening you’d rather not leave to chance, you can now book a table in a few clicks.
And when the weather allows, our terrace is open too — one of the nicer places in the neighbourhood to start an evening.
Good to know
- Parking — metered from 9am to 6pm, Monday to Saturday, and free outside those hours. As we open at 6pm, street parking is free for the whole of your evening.
- Payment — debit and credit cards, Amex, contactless including Apple Pay and Google Pay, and cash.
What we pour
Rum is our speciality: more than 150 bottles on the back bar, chosen for the way they’re made — artisanal, without additives. Alongside them, a menu of seasonal creations that changes through the year, the classics done properly, and our own bottled cocktails to take home.
The story behind the bar
The Modern Alchemist was born from the meeting of three bartenders who wanted a place of their own. The team has changed since — today Christopher continues the story with Marie and Cedric at his side — but the values haven’t: the finest spirits, real creativity, and the warmth of a neighbourhood bar.
