Absinthe Bovet Le Chat
“The absinthe of Willy Bovet is made up of 10 aromatic plants, all of which are medicinal plants. Plants such as the grand wormwood (Artemisia absinthium, called la grande absinthe in French), the roman wormwood (Artemisia pontica or la petite absinthe in French), and mint are all either directly grown by Willy Bovet or produced by local farmers.
After having been cleaned and dried in the traditional method, which consists of drying the plants in bundles in a well-ventilated place, the plants having been previously cut, are ready for maceration which precedes distillation. A still is obviously necessary for the distillation process. The one used by Willy Bovet was made by Roland Thonney, another colourful character of the Val-de-Travers.” -From Absinth Bovet.
